1. Coffee Starts as a Cherry
Typing practice
Type the text exactly. Timer starts with your first key.
Text to type: Coffee grows on a plant as a small fruit called a coffee cherry. When many coffee cherries are ripe, they can be red or yellow, depending on the plant. Inside the fruit are seeds. We call these seeds coffee beans because of their shape. After picking the cherries, producers remove some or all of the fruit and dry the seeds. Before roasting, the dry seeds are called green coffee beans. They are usually pale green, not brown. Roasting later changes their colour, smell, and flavour.

2. Arabica and Robusta
Typing practice
Type the text exactly. Timer starts with your first key.
Text to type: Arabica and Robusta are the two main commercial coffee species. Arabica is common in specialty cafés. It can have sweet, floral, fruity, or bright flavours. The plants can be more difficult to grow and are often grown at higher places. Robusta plants are generally tougher. Their coffee often has more caffeine, stronger body, and more bitterness. Some espresso blends use Robusta to add strength and body. However, Robusta does not always mean bad coffee. Careful farming, processing, and roasting can also produce high-quality Robusta.

Fruit removal with water and whole-cherry drying beds show washed and natural processing.Reading
3. Washed and Natural Processing
Typing practice
Type the text exactly. Timer starts with your first key.
Text to type: After picking, producers must separate and dry the coffee seeds. In the washed process, machines remove the fruit before the seeds are fully dried. Water is often used during the process. Washed coffees are often known for clean flavours and clear differences between flavour notes. In the natural process, the whole coffee cherry dries around the seed. Producers turn and watch the cherries carefully while they dry. Natural coffees can have stronger fruit, sweetness, or fermented flavours. If drying is not controlled well, the flavour can become unpleasant.

4. Honey Processing Sits Between Them
Typing practice
Type the text exactly. Timer starts with your first key.
Text to type: Honey processing is also called pulped-natural processing. First, producers remove the outer skin and some fruit. Some sticky fruit material stays on the seed while it dries. This material can feel like honey, but producers do not add real honey to the coffee. The method sits between washed and natural processing. It can keep some clear flavours while adding sweetness or fruit character. The exact result depends on the coffee, the amount of fruit left on the seed, the weather, and how carefully the producer controls drying.

Visitor
These bags say washed, natural, and honey. Are they different flavours?
Noah
They are different ways of processing coffee after the cherries are picked.
Visitor
What happens with the washed coffee?
Noah
The fruit is removed before the beans are fully dried.
Visitor
And the natural coffee?
Noah
The whole cherry dries around the seed, so it can taste fruitier.
Visitor
Does the honey coffee contain honey?
Noah
No. Some sticky fruit stays on the seed while it dries.
Visitor
That makes sense. I would like to try the natural coffee.
Noah
Good choice. I can make a small cup for you.
Visitor
Thank you. I am looking forward to it.
